Chettinad Chicken Biryani Making Process :  Winter festival is just around the corner. Along with Christmas, New Year and immediately after Sankranthi, how can houses not be crowded with dishes, especially chicken? There are many people who think that festival means non-veg. But if you want to make something special at home during the festival, you can make Chettinad Chicken Biryani. Now let's know how to make it..what are the required ingredients. 

Ingredients required

Rice – two cups

Chicken – Arakilo

Onions – 2 (Cut into pieces)

Tomatoes – 2 (Cut into pieces)

Capsicum – 2

Garlic – Three ribs 2 (cut into small pieces)

Ginger – inch (cut into small pieces)

Yogurt – 1/4 cup

Yellow – 1 tsp

Chili – 1 tsp

Anise – 1 tsp

Cloves – 3

Cardamom -3 

Coriander powder – 1 teaspoon

Ghee – 2 tbsp

Oil – 2 tbsp

Salt – enough to taste

Coriander – one bunch (medium)

For marinating the chicken..

Ginger garlic paste – 1 tsp

Yogurt – half a cup

Turmeric – 1 tsp

Pepper – 1 tsp

Salt – enough to taste

For Garnish

Onions -2 (finely chopped)< /p>

Cashews – 15

Roast onions and cashews in oil till they turn brown and keep aside.

How to make Chettinad Chicken Biryani< /h3>

For Chettinad Chicken Biryani, first marinate the chicken. For this take a bowl and put chicken in it. Wash it well and strain it without water. Add ginger garlic paste, curd, turmeric, chilli and salt to it. Mix all these ingredients well..Mix the chicken pieces well. Keep it aside for an hour. 

20 minutes before making the biryani, wash and soak the biryani well. Strain the water and keep it aside. Now light the stove and place a large pan on it. Add ghee to it and heat it. Add anise, cloves, cinnamon, cardamom. Once they are fried, add onions, ginger and garlic and mix well. Fry well till they become golden brown. 

After the onions are fried, add the marinated chicken to it. Cover the pan and let it cook for a few minutes. Now add tomatoes, green chillies, chilli and salt to it and mix well. Then add curd and coriander leaves. Mix everything well and cook for some time. After that mix the chicken well.. Add the soaked rice on it.. Add the roasted onions and cashews and cover it.. Reduce the flame.. Cook for another quarter of an hour. 

Stove off.. Garnish with coriander leaves and serve hot. Chettinad Chicken Biryani is ready. You can easily pull it with gravy curry, raita. Even without these, Biryani gives you a good taste. Prepare your plate with juicy lemons. Your every event will become special.
