Lauki Barfi Recipe: Everyone eagerly waits for the festival of Navratri, this time Chaitra Navratri will start from March 22, 2023.  In these nine days of Navratri, you can prepare and eat different dishes while fasting. For those who have a sweet tooth, here is an easy homemade dessert recipe that you can make at home with just a few ingredients like bottle gourd, milk, sugar, ghee, milk powder and grated coconut. Be it children or adults, everyone will like this delicious sweet. 

Make tasty and healthy gourd barfi on Navratri fast

Festival, Puja or any other special occasion, this Lauki Barfi recipe is best for every celebration. This barfi recipe made without khoya or mawa is as creamy as store bought. To make Lauki ki Burfi even more delicious, you can garnish it with almonds, cashews and raisins. Fill the remaining barfi in an air tight container and keep it in the fridge. Ingredients of Lauki ki Barfi

1 kilo gourd
3 1/2 cup milk
3/4 cup milk powder
1 cup grated coconut
2 tbsp ghee
3/4 cup Sugar
2 drops edible food colour

How to make Lauki ki Barfi

Step 1- Peel and grate the bottle gourd

Peel the bottle gourd and take out the hard seeds. Now grate the bottle gourd and collect it in a bowl.

Step 2- Fry the bottle gourd

Heat 1 tbsp ghee in a pan. Add grated bottle gourd and fry for 5-6 minutes or till it becomes soft.

Step 3- Add milk

Now add 2 cups of milk and cook for 20-22 minutes.

Step 4- Add sugar and colour

Now add sugar and green food color to it. Cook for a few minutes or till the sugar melts completely. Switch off the flame and keep it aside.

Step 5- Make the coconut mixture

Heat 1 tbsp ghee in another pan. Pour 1.5 cups of milk and let it boil. Add grated coconut and mix. Cook for 8-10 minutes or till the mixture thickens.

Step 6- Mix both the mixtures together

Mix the thick coconut mixture in the bottle gourd mixture. Keep on medium flame and cook for 8-10 more minutes.

Step 7- Pour into a mold and let it set

Now put the barfi mixture in a mold and make it smooth. Let it set for 3-4 hours or till it takes shape properly.

Step 8- Cut into barfi

Now just cut the frozen slab in the shape of barfi.
