It is produced in the ovary of a pregnant hen, so the correct answer to the egg riddle is that the hen, not the egg, came first on earth.

The research team used a high-tech computer called HECTor to see the structure of the shell. They found that OC-17 acts as a catalyst, kick-starting the calcium carbonate in calcite crystals in the chicken’s body. It is they who form the hard shell, which contains the yolk and its protective fluid during the development of the chick.

Dr Colin Freeman, from the University of Sheffield’s Department of Engineering Materials, said: “It was long suspected that the egg came first, but we now have scientific evidence which shows that the chicken did in fact come first.” The protein had previously been identified and linked to egg formation, but by examining it more closely we have been able to see how it regulates the process.
