Whenever there is a discussion on the Mughal Empire, there is a mention of familyism, harem and food. Most people believe that only meat and fish were offered in the Dastarkhan of the Mughals, but history says that this is not entirely true. The Mughal rulers have always been strict about food. He also had his own likes and dislikes, which were taken care of a lot.
The food of the Mughals was completely contrary to the common belief. From Akbar to Aurangzeb, he liked vegetables and different types of greens. Emperor Akbar was considered a good hunter but he was not particularly interested in eating meat. For him, meat was only an option to maintain physical strength, so he used to include meat in the food occasionally.
Mughal emperor and his abstinence from meat
According to historians, in the early period of the Sultanate, the Mughal emperors used to avoid eating meat on Fridays. Over time, one more day was added to it. Along with Friday, he also started avoiding meat on Sundays.
Gradually, the scope of his abstinence from meat started increasing. Started the tradition of not eating meat on the first day of the month, the entire month of March and the month of birth, which continued in the next generation as well. In those days, their food started with curd and rice.
The food of the Mughals was divided into 3 parts
The food and kitchen of the Mughals has been mentioned in his book by Abul Fazal, who was included in the nine gems of Akbar. He has written in his book Ain-e-Akbari that during Akbar’s time his food was divided into three parts.
first: That special kind of food in which meat was not included at all. It was called Sufiana food.
another: This food which was made of meat and grain together. However, not much spices were used in it.
third: It was a food in which meat was used more. Along with this, more ghee and spices were also used.
Abul Fazal writes that the first choice of the emperor was pulses, seasonal vegetables and pulao. Keeping in view the choice of the emperor, the cooks used to prepare different types of dishes prepared from vegetables. In which many types of casseroles were included. This was the reason why revenues were also waived off to promote vegetable cultivation.
Aurangzeb went a step further
In this matter, Aurangzeb went one step ahead of his ancestors. Aurangzeb was very fond of food and drink.Over time, avoiding meat became a habit of Aurangzeb. As a result, simple food was offered to him. The royal cooks used to try to make special dishes for him from different vegetables.
Many information was received from the letter that Aurangzeb wrote to his son. Aurangzeb had mentioned in his letter about the Suleiman cook who used to make khichdi for him. Through the letter, Aurangzeb asked to send that cook to him so that he could make him cook the same food that he liked.
Fresh fruits were Aurangzeb’s weakness
Even in the era of royal food, fresh fruits, especially mangoes, were Aurangzeb’s weakness. The talk of making such a distance from meat in the Mughal period is astonishing. This has been the reason why his cooks used to offer kebabs made of wheat and pulao prepared with gram dal in the meal. It was one of his favorite meals. Historians say that the use of koftas made of paneer and fruits in food is the gift of Aurangzeb.
